Pak Choi (a.k.a. Bok Choy) is a key ingredient in many Asian cuisines. In our trials, Win-Win Choi exceeded our expectations in taste, texture, heat and cold tolerance. Slightly smaller vase-shaped heads are more compact than most Pak Choi varieties, with a height of about 10-12 in. Deep green, spoon-shaped leaves have thick, juicy, bright white stems with a serious crunch that holds up well to stir-frying, braising, grilling, and boiling. The flavor is like sweet, mild cabbage with a subtle mustard-like bite.
Plants also hold up to considerable summer heat before bolting, resulting in an extended harvest time for mature heads. If some of your plants do start flowering, the buds and young flowers are edible and tasty. Win-Win Choi may be sown in the fall in mild climates, or early spring to early summer in all but the hottest climates. May also be harvested as mini heads in about 30 days from sowing.
Growing Win-Win Choi Pak Choi Seeds
Sow in cell packs or 2 in. pots, lightly cover. At 60-70°F., germination is in 5-14 days. Can direct sow ¼ in. deep into prepared seed beds, 1 in. apart, in rows 12-18 in. apart. Thin to 2 in. apart for baby greens and 8-12 in. for mature plants.
